This could, and probably should, go in a thread of its own for Paul's best quotes or one-liners, but in one of the first interviews I read, during the 14 Songs era, I think, Paul admitted to 'being scared of everything.' Aww... That line always stuck with me.
Then years later in another interview he said (and I looked it up so I could quote him properly), 'That's the only thing that baffles me--this perception that Paul is tough or mean. I just have a low threshold for stupid people.'
That made me laugh.

Ohhh too many to list all, but here's one:
I've heard certain guitar sounds being described as "crying" but the repeated riff at the end of "What a Day for a night"... that's the epitomy of a crying guitar. The subtle overtones, that sound. Gets me every time.
