I know it's only been played live, but their cover of Petula Clark's "Downtown" floored me the one and only time I got to hear it (at the Beacon in '87)

No particular order:
"I'm So Lonesome" -why doesn't anyone ever mention it? Great song for him to do. You can fuck it up and still sounds great.
"Mr. Rabbit"- never heard another version, so I have nothing to compare it to.
"All I Really Wanna Do"- I love this. I'd like to see him do an "official" version on the next record. But then it might turn into another "Souvenirs".

Hard to believe I left off Another Girl and Mr. Rabbit. I also agree I'm So Lonesome is a perfect song for Paul.
