Hmmm ... it just so happens that all seven birds named in this song are listed on page 202 of the book "Minnesota Birds" by Janet C. Green and Robert B. Janssen: hermit thrush, finch, cedar waxwing, house wren, barn swallow, brown creeper, yellow warbler

He's playing verbal tricks along the lines of "stars are starting to shoot" in this part:
"See the barn swallow, smell the gunsmoke / lonely tomorrow, hear the farm choke"
You go from a bird name that happens to double as a noun-verb (barn swallow) through a noun that includes the same kinda thing (gun smoke) to a funny third example of noun-verb, what happens when a barn swallows: "farm choke" ... his own invented bird name I guess, since the rest of the song isn't really about the farm crisis.
That couplet seems to function within the song the same way this one does in "Love Untold" -- a very similar song:
"Soft hands slowly move across the blank white page / Thinking of words for my silent lips and fingers to obey"
